Menu Design

As part of my culinary skills module, I was required to organise a learning event that involved designing a three-course menu consisting of a starter, a choice of fish, meat, or vegetarian main course, and a dessert. The assignment also required me to complete full menu costing and allocate my classmates to appropriate kitchen stations to ensure efficient workflow during the event. Although I found the task challenging, I thoroughly enjoyed the experience and developed a range of valuable skills that I am confident will benefit me in future culinary and organisational work.

Industry Work-Placement

In 2024, I completed a six-month industry work placement at the Mandarin Oriental Hyde Park, London, where I worked within the breakfast department. Following this experience, I was required to produce a report that reflected on my placement and examined the Mandarin Oriental as an organisation. This included analysing its daily operational practices, exploring the work carried out behind the scenes, and evaluating how these processes contribute to the hotel’s overall service standards and guest experience. 

Creating a new business

For my final year project, I am developing Suya & Soul, a culturally focused food and hospitality concept designed to address identified gaps in Galway’s dining and social landscape. This project allows me to integrate theoretical knowledge from my programme with practical business development skills, including market research, concept design, customer analysis, and operational planning. The creation of Suya & Soul involves a comprehensive examination of consumer needs, particularly the demand for accessible, nutritious meals and culturally diverse dining experiences. By designing a business model that combines daytime takeaway services with an evening lounge setting, the project demonstrates my ability to apply strategic thinking, evidence-based decision-making, and creative problem-solving. Additionally, the project highlights the importance of cultural representation and inclusivity in contemporary food enterprises, as it aims to promote Nigerian culinary traditions while fostering intercultural engagement within the local community. Through this work, I am producing a well-researched and professionally structured business proposal that showcases both academic learning and entrepreneurial capability.
